Christmas Cookie Recipes

#92984 2 years, 10 months ago
Post your favorite.

Maybe not my favorite, but sure easy, because it doesn't require any baking. I'm saying it's so easy Cap'n Tony could do it, although he might get a little gooey.

Chocolate Peanut Butter Cornflake Cookies

1 pkg. (6 oz) chocolate bits
1/2 cup peanut butter
3 cups corn flakes

melt chocolate and peanut butter on low heat in large pot.
add corn flakes and mix gently
drop spoonfuls on cookie sheet lined with wax paper.
place in cool place (like your garage) to firm up for an hour or two.
once firm they stay firm (that's what she said)

Here's another easy one. Happy Holidays!

Mom’s Chocolate Coconut Drops

1 can (14 oz) sweetened condensed milk
2 oz. unsweetened baking chocolate
1/4 tsp salt
3 cups sweetened shredded coconut
1 tsp vanilla

In heavy pan or double boiler, melt chocolate with sweetened condensed milk over medium heat, stirring until slightly thickened, about 10 minutes. Remove from heat. Stir in salt and vanilla, then coconut. Drop by rounded teaspoonfuls onto greased (or parchment covered) cookie sheets. Bake at 350 for 12-15 minutes, until starting to darken, and cool on racks.

Bump...

Figured I had to redeem myself for the Holiday Death Watch Thread.

These are good any time of year. My neighbor made them as a kid. An elderly widow named Mrs. Kime. Her house always smelled like these delicious cookies. Hence the name.

Kime Cookies

1 cup oil (or crisco)
1 1/2 cup sugar
3 eggs
Mix these until creamy

2 3/4 cup sifted flour
1 tsp baking soda
1 tsp nutmeg
1 tsp cinnamon
1 tsp clove
1/2 tsp salt
Sift all these together and add to above creamy mix.

Spoon size onto baking sheet. Bake 350 for 12 minutes

I would really like a cookie right now.
I can't come down, it's plain to see.
I can't come down, I've been set free.
Who you are, and what you do,
don't make no difference to me.

No Bake Potent Rum Balls:

1/4 cups crushed vanilla wafers
3/4 cup confectioners' sugar
1/4 cup unsweetened cocoa powder
1 1/2 cups chopped walnuts
3 tablespoons light corn syrup
1/2 cup rum

Directions

In a large bowl, stir together the crushed vanilla wafers, 3/4 cup confectioners' sugar, cocoa, and nuts. Blend in corn syrup and rum.

Shape into 1 inch balls, and roll in additional confectioners' sugar. Store in an airtight container for several days to develop the flavor. Roll again in confectioners' sugar before serving.
