The recipe says two cloves of garlic, but the photo looks like two bulbs (comprised of many cloves).

and you might want to add a dash of this

It was two bulbs of garlic, not cloves, roasted and minced.

I had a meeting to go t half way through this batch and it naturally distracted me. When I came back I put thyme in, for the second time. Damn, it was looking good except for that. I'm not sure if it totally ruined it. I finished what I was doing, put in the meat and veggies, tomato paste, cooked the bacon etc. I'll have to wait until its finished to find out. I guarantee that people will be able to tell that there's a mistake in it. We'll just have to see if they like it.

I'm excited for ya, this is really fun. Love your passion, and wish ya the best.
I really don't think a lil extra thyme will ruin or even hurt this batch. Herbs can be very forgiving...

You're right BR. I finished the batch and its not that bad. I would have preferred cumin being a little stronger, but the thyme isn't to bad.
Definitely not ruined, plus it still has to set up overnight.

I'll finish writing the recipe in the morning.

You know I bought a yellow onion, some scallion, and celery and haven't put them in yet. Thanks for the reminder, ill do that in the morning. Should i fry the onions in a pan before adding them?

I like to cook when I have time and not distracted. I should have quit after the meeting I had at a clients house. It threw me off my game.

personally, i would cook (saute) the onion and skip the celery and add the scallions late to keep 'em green and add some color to the chili, kinda like the corn does...
I just assumed you had a "safety" meeting when ya added the thyme twice!!!!

Sautéed, add scallions late, save the celery it is!

Bit of a knot I'm going to try and untangle. One of the program directors pets type thing. Honored that they would ask me, but it took my concentration and train of thought away from cooking.
